VALLEY ORIGINAL NAMED ENVIRONMENTAL CHAMP

by Christian Mower on December 1, 2011

THE STATE OF NEW HAMPSHIRE HAS DESIGNATED ONE OF THE VALLEY ORIGINAL RESTAURANTS AN ENVIRONMENTAL CHAMPION UNDER ITS SUSTAINABLE RESTAURANT PROGRAM.

DEPT. OF ENVIRONMENTAL SERVICES SPOKESMAN JIM MARTIN SAYS IN PARTNERSHIP WITH THE NEW HAMPSHIRE LODGING AND RESTAURANT ASSOCIATION, MARGARITA GRILL IN GLEN IS THE FIRST RESTAURANT IN THE WHITE MOUNTAIN REGION TO GET THE AWARD, BECAUSE OF ITS EXTRA EFFORT TO REDUCE ITS ENVIRONMENTAL IMPACT BY REDUCING WASTE, ENERGY AND WATER USE.

THE AWARD IS THE HIGHEST DESIGNATION IN THE SUSTAINABILITY PROGRAM – ONLY TWO OTHER RESTAURANTS IN THE STATE HAVE EARNED IT.

MARGARITA GRILL OWNER CORRINE ROBER SAYS IT’S PRETTY GREAT TO GET THE AWARD BECAUSE IT WAS A LARGE PROJECT THAT TOOK A LONG TIME.

ROBER HAS A GREEN TEAM THAT MEETS REGULARLY. TO TALK ABOUT REDUCING THE RESTAURANT’S ENVIRONMENTAL IMPACT AND CARBON FOOTPRINT. SHE HAS UPGRADED LIGHTING AND EQUIPMENT TO BE MORE ENERGY EFFICIENT, AND INSTALLED LOW FLOW DEVICES AND RAIN BARRELS TO CATCH ROOF WATER, WHICH REDUCES HARMFUL RUNOFF – AND PROVIDES WATER FOR LANDSCAPING.

THE RESTAURANT RECYCLES, BUYS IN BULK, MINIMIZES THE USE OF PLASTIC AND USES LESS CHEMICALS WITH ITS INTEGRATED PEST MANAGEMENT PROGRAM.  IN ADDITION, MARTIN SAYS THE RESTAURANT IS COMMITTED TO BUYING FOOD FROM LOCAL FARMS, WHEN AVAILABLE, A PRACTICE HE SAYS SUPPORTS THE LOCAL ECONOMY AND REDUCES TRANSPORTATION IMPACTS THAT CAUSE AIR POLLUTION.
